Caerphilly is a hard, crumbly white cheese that originated in the area around the town of Caerphilly, Wales. It is thought to have been created to provide food for the local coal miners. It has a lactic taste, with a tang of lemon. The cheese is nicknamed "The Crumblies".
Caerphilly Blue was created more by coincidence, with the rich creaminess of the caerphilly, followed by the short saltiness and blue tones, it is blue cheese that was and still is different from most British blues. It was aged for longer time giving it a unique depth of flavour.
