Description

Traditional Dunlop is a hard cheese made from the raw or pasteurized milk of Ayrshire cows.

When young, it is smooth and mild, but as it ages (we age at least 3-6months, in smaller wheels) subtle, nutty, creamy flavors develop and the texture is drier and slightly springy.

As with all cheeses, the longer it ages, the stronger the flavors develop. And to top it off, infused with a little bit of Blue, and it kicks up the flavor a notch higher.
