Like Manchego, Hispanico comes from the La Mancha region of Spain.
Made with all cows milk, it is called Hispanico cheese.
When made with all ewes milk the cheese is called Manchego.
We have tagged in some blue to the Hispanico! The flavour is full, yet tasty and more aromatic. Natural rind, hispanico flavour, and with brilliant blue notes. Nutty, earthy and creamy.
It is typically served as a table cheese , but is also appropriate for cooking. It pairs well with Spanish red wines and cured meats, such as Chorizo and Jamon Serrano.
