Kerabu Cheese is an Asiago ( Italian Cheese) infused with local ingredients such as torch ginger flower, citronelle, blue pea flower. The aromatic bracts emit a sweet, floral, and subtly ginger-like scent and have a sweet and sour, piquant flavor with citrus-forward nuances. The blue color of the cheese comes from the petals of Clitoria ternatea flowers, which are used as a natural food coloring.
