Queso fresco — “fresh cheese” — is a Mexican cheese, traditionally made from raw cow milk or a combination of cow and goat milk. It is a soft, moist cheese. Curd-like, light and fresh with a salty and slightly tangy flavor but with more mild, milky notes. In traditional Mexican cuisine, Queso Fresco is used to balance rich, spicy dishes, either as a topping or as a stuffing cheese. In this rendition, Queso Fresco is directly rubbed with Cajun spice to elevate the flavor! Combining the best of both worlds. Eat with plain crackers or add in to spice up your salad.
